Mexican antojitos
The Huastecan is born from the idea of the word "Huasteca Potosina" which belongs to the state of San Luis Potosi, Mexico.
In which we are inspired to sell typical dishes of this beautiful region, especially the chorizo which is really different that you are common eating.
We got the idea of making this buisness of chorizo with our experience to see the street food around the world . Thibaud from France and Gemma from Mexico, traveled to lot of differents countries . But during the pandemic in 2020, we were living in Mexico and we started to sell some french food for take away as a catering and we kept in our mind that our dream would be to have our own buisness.
Gemma is from Ciudad Valles, the city from the Huastecan Region in Mexico , where the food specialities are really popular.

Gemma was missing the taste of real Mexican chorizo while we were living in London. I tried making some using a recipe I found online, but when she tasted it, she said, “It’s good… but it’s not the same.”
That moment sparked a journey. We kept experimenting and researching, even after we moved to Dublin. And then, one day, she tasted this chorizo — and her eyes lit up. “That’s it. That’s the taste I’ve been missing.”
Right away, we knew we had to share it. We started El Huastecan to bring that authentic flavor to the Mexican community here — and to anyone who wants to experience a true taste of Mexico, no matter where they are.
